Patina Bamboo

The few-month-old patina on my carbonized steel wok is flaking. What’s the best way to address this?
I took a traditional bamboo wok brush to my wok for the first time only to peel off portions of the lighter patina toward the rim of the cooking vessel in the process. Might this be due to the lighter patina not being developed enough, my novice brushing, or something I’m not considering? I’ve also noticed the black and further developed patina on the inside bottom begin to flake.Should I scrape the whole thing off or simply season over these areas? Why?
A few things may have happened here, first are you sure you removed all of the machine oil from the wok before seasoning it? Did you have enough oil to season the wok and a high enough heat? (Most books give very vague instructions or don’t stress the time required to properly season carbon steel.) Could also be that the wok wasn’t cleaned enough from the last time it was used, and what your seeing is the carbon from the last meal. Use a coarse salt (no soap!!!) to remove the particles if this doesn’t help, put a film of oil in the wok and place it in the oven at about 150-175 degrees F. for about 3-5 hours, swirling the oil around every 1 1/2 hours or so to reseason the wok. Once seasoned you only need to clean the wok with hot water and your wok brush. The only time you have to reseason is if the wok was cleaned with soap or it becomes rusty. For the later, scrub with a brillo pad and reseason. I own 6 different size and style woks and have never had a problem. Hope this helped you out.
